That's vinegared venison with red cabbage for you mongrels out there.

Start with a good tough cut of venison. A bone-in blade or shoulder roast works well, traditionally it's done with a hock, but I've found whitetail hock to be too gamey. Might work well with Elk or Schweinhaxen though.

Throw it in the crock pot.

Also add, 3 stalks sliced celery, 2 sliced parsnips, 1 diced white onion, a teaspoon crushed juniper berries, 1/2 cup balsamic vinegar, 1/2 head shredded red cabbage, 1 bottle bock beer, 2 sliced carrots, 5 bay leaves, and 1/2 cup fresh mushrooms. Salt and pepper to taste after it's cooked awhile (vinegar will draw out the flavors as it cooks). A variation adds some ground mustard seed or fresh grated horseradish.

Crock pot on high until you get a good steady simmer going, then on low until the meat flakes off the bone and the cabbage is soft. You should be able to eat it with a spoon.

Serve over rouladen (or mashed potatos for you heathens) and enjoy with a good lager.
