MEAT & POTATO PIE.

Can't get good pies in France so made one from this recipe today - delicious with a portion of mushy peas and mint sauce....................................

MEAT & POTATO PIE.
500gm Cubed lamb shin or Beef
5 Tablespoons seasoned flour.
6 Tablespoons Veg Oil
1 Diced Onion
2 Carrots (Optional)
500 gm Parboiled potatoes
350 mltr Beef stock
Pastry
Beaten Egg.
++++++++++++++++++++++++++++++++++++++++++++++++++++++++
Dust the meat in the flour
Fry meat & onions - 3/4 mins
Add the stock ( and carrots ), Season and stir well
Bring to the boil, stir again , cover and simmer for approx 1 hour until the meat is tender.
Pre heat oven to 230ºC, add the potatoes and stir well.
Place in oven proof dish and smooth over.
Cover with pastry, crimp edges, cut steam slits and then brush with beaten egg.
Bake for 40 mins until crust is golden brown.
