4th of July party food

A friend of mine who used to be a chef for a while years ago and sent me this recipe. Too early for me to work up any mouth watering over BBQ flank steak and Guacamole....but maybe one of you can try it out and tell me what you think of it. Whatever it is....it isn't bland and lacking in imagination. And probably nobody reading this has ever been served it before. Here it is:

July 4th is almost here. I am BBQ-ing my favorite recipe. If you have not tried this you don't know what you have missed. Here is the recipe:
SgtMike's BBQ Teriyaki Flank Steak with Guacamole

4 to 6 flank steaks cut in about 3/4 inch strips (not too thin and not to thick. Meat needs to be cooked all the way through so too thick would hinder this. Meat is going to be used as finger food to dip, so too thin would not work).

6 cans of beer
6 bottles of Lawry's teriyaki Marinade (If you can't find the plain go with the lime)
2 -3 bunches green onions (chopped)

Put the beer, LTMarinade, and onions in a huge container. (Glass or Porcelain not plastic) Taste it If it dosen't taste just right for you then add either soy sauce or Worcestershire sauce. One make is sweeter and the other makes it salty. (play around with if, remembering it is going to be use to dip guacamole. So sweet is probably not what you all looking for). Add the meat and let marinade in the refrig over night or longer if you'd like. I haven't
had much luck with less time. Best to BarB Que early morning because you want to return the cooked meat to the refrig and let it cook and setup. Probably 2 to 4 hours.

Guacamole

10 - 16 Avocados pitted and shelled
1 pint of Cottage Cheese
1 jar of Baco Bits
3-4 roma tomatoes diced fine
1 small onion chopped medium-fine
3 -4 hard boiled eggs
chili powder to taste
paprika to taste
garlic powder to taste
onion powder to taste
salt pepper to taste
shredded cheeses (I like the 4 Mexican cheeses combination)

Now I would usually stop here with the ingredients but I have found some people like to add these pick and choose:

Lime juice
Carrots chopped fine
Jalapeno peppers go easy
Anaheim peppers good sub for bells
Bell peppers
Cilantro
Parsley

Now combine everything except the hard boiled eggs to a container that you can mash to a lumpy consistency.

Pour out on a cookie sheet put tin foil on the sheet. Spread the mixture out, sprinkle the eggs over the top and smother the guacamole with the cheeses

Put in a 450 degree oven until the cheeses are melted.

Put in the middle of the table and bring on the chilled BBQ Teriyaki Flank Steak. Use the strips of meat like you would a chip. ENJOY.
