South Alabama Baby Back Ribs

Now this recipe has some provenance. My father, fifty years or more ago was, in his business travels, invited to a clients house for supper. The client was old southern stock and well off to say the least. They had bbq baby back ribs on the menu and my father liked them and asked how they were prepared. The host called in an old black woman, who was the cook, and she told her secret of how they were cooked. Nothing much to it but it's been my favorite way to cook them all my life.
First thing, get some good fresh baby back ribs......not those in the industrial strength plastic that came from who knows where that the local chain store usually offers.
Second, season them to taste. I like lemon pepper and a little season salt.. Use whatever strikes you.
Now here is the first part of the secret recipe. Get a sprinkle bottle and fill it about three fingers full of a mild vinegar and add about an equal amount of water. Then put in a couple of dashes of soya sauce. Put the sprinkle top on . Give the ribs a mild sprinkle.
Get your charcoal fire hot and put the ribs on the grill.
This part is optional. Open a beer. Light a Churchill size cigar.
Turn the ribs about every seven or eight minutes. Every time you turn them sprinkle with the vinegar and water.
After about three beers and the cigar down to about two and a half inches, it's done. If not doing this way to time it, about 45 minutes should do it. Just have to pay attention to the heat of the fire.
Then, and only then, this is the second part of the secret recipe, put on your favorite bbq sauce. Turn once to let the sauce cook just a little, and bring them in and serve.
