Its described as a Lee Enfield, but all that appears to be left is the action, bolt, trigger, triggerguard and magazine. So when is a Lee Enfield not a Lee Enfield ?

Only if the barrel has Enfield rifling, otherwise it's a modified Lee.

Pedantically speaking, of course.

Why do people bother?

I think this Lee Enfield is an example of the French inspired conversion called the LeZombie. Does have a new thick barrel though.....gives you the idea of superior accuracy, although really made for the new ZEHW round........short for Zombie Explosive Holy Water round. You will note the stainless steel of the barrel. Holy Water plays hell with lessor metals you know.
