Elk Stew

At risk of derision by epicures out there I'll post my elk stew recipe I took to work today for "potluck"'.

1 elk sirloin tip steak,cubed small

1 polska kilbasa cubed small

1 dozen home grown anaheim peppers chopped fine

1 sweet onion chopped coarse

1 can sweet corn

6 fresh tomatoes

6 mushrooms sliced(your choice on variety,I had store bought)

1/2 tsp garlic powder

4 bay leaves

1cup flour

1 tsp salt

1 tsp coarse pepper

2 large potatoes cubed(gotta be Idaho spuds or they are only tubers)

4 carrots sliced

1 can beef stock or boil down some elk trimmings,I used leftovers from previous nights chislic meal.

Shake elk meat in paper sack with flour,fry in hot oil til brown,if using dutch oven just do it right in the pot.

layer in the above ingredients,season,and heat to boil for about an hour.reduce heat and simmer for 2 hours.Can serve but is even better next day re-heated and eaten with fresh biscuits.

I won't be a Chef on TV but it is good and darn filling. :bigsmile:
